So we don't pollute the dinner thread, what's for lunch?

Today I'm having a chicken chimichanga enchilada style from Carolina's.

The wife made turkey salad so I put a couple of scoops on a pretzel roll. The grapes were a nice touch.

Today is the first day of Lent. Fat Tuesday brought last night's dinner of pancakes, bacon, and scrambled eggs. No more meat or eggs allowed until Easter.

For lunch I think I'll make a sardine sandwich: sardines, onions, pickles, and mustard on a dense Danish rye bread. Carrots on the side.

I don't know. How could it be? It has eggs in it. Then again, I'm more of a medieval Lent adherent, so probably most people allow themselves eggs. I never would because, man, you have no idea how amazing eggs are at Easter brunch when you haven't had them in six weeks.

It's just coarse salt and coarse pepper, heavy on pepper. They were spraying it with something. I asked the guy working the pitt what it was and all he would tell me was it was apple cider vinegar based. After 2 hours in line and 8 beers, it was amazing. They let us bring our cooler onto the back patio which was a nice touch.

leftover soup i made. onions/carrots/butternut squash sauteed in oil and garlic. add veggie stock and bring to a simmer. add copious amounts of cayenne, coriander, turmeric, cumin, smoked paprika, salt and pepper. add tomato puree and some very creamy peanut butter. add garbanzo beans and some chopped kale. let simmer about 5-10 mins.

delicious. very hearty and rich tasting soup. only about 250 calories a bowl.

Turkey Wrap
Apple
pretzels
diet coke

approx 300 calories.

I'll be cutting and pasting this for the lunch thread routinely; rinse, wash, repeat.

How do you get the calories so low with the tortilla wrap being so high just in itself?

Mission Tortilla's 8inch flour, are about 150, apple is about 70, 0 for diet coke, and pretzels about 100. wrap is tons of spring mix/spinich, mustard and turkey, no cheese.

Probably closer to 400 come to think about it. I try to ride into dinner having consumed about 600-700, but then it all goes to shit.

depending on the brand, tortilla range form 120-220. You have to stop at one (I know, its hard).

I switched from sandwich bread, which is about 100-120 per slice, so with 2 slices per sand, I cut that out fast.

Since Shark Week is during the middle of summer, campus dining where I work at had Shark Week this week. Stopped by the buffet for lunch.

Shark steaks, shark stir fry, shark kabobs, shark fillets, grilled shark and so on.

That sandwich is grilled shark with green chilies on it, very good. That clam stuffed manicotti was also very good. Gumbo was tasty.

And yes, I did clean my plate off mom.

I talked to the woman who manages the campus buffet, she said they lose quite a bit of money this week.

Not me....but a girl I am training this week at work. One of three people:

"I brought tuna salad today....but I ran out of mayonnaise this morning so I had to do something different...we made biscuits and gravy yesterday so...I just used the gravy. I think it'll be fine."

wtf??
